Domaine Arnaud Baillot Gevrey‑Chambertin Premier Cru “Combe au Moine” 2021 is a strikingly elegant and terroir-driven red Burgundy from Côte de Nuits, crafted by passionate young vigneron Arnaud Baillot, based in Beaune. Sourced entirely from the esteemed Premier Cru vineyard Combe au Moine, this 100% Pinot Noir reflects the limestone-rich clay-marl soils of its hillside origins.

Adhering to sustainable viticulture, the grapes were hand-harvested, destemmed, and fermented for 15 days in stainless steel, with gentle extraction. The wine aged 15 months in oak barrels (15–50% new) and was bottled without filtration. It showed bright ruby hues, rich aromas of black cherry, blackberry, clove, leather, and violet, developing layers of spice, nutmeg, tobacco, and earthy notes. On the palate, it balances power with silken texture, firm but velvety tannins, concentrated dark fruit, and a chalky, lingering finish. Enjoy now or cellar through 2035.
